Laila Al Khaja is a cook who had a dream. Moving from her home in Jordan over twenty-five years ago to make her life in Dubai she first began a culinary journey in learning how to cook. Until then she had only watched her Mother in the kitchen. Early on she realised how much she enjoyed preparing food for people she loved and it became a lifelong passion, initially creating delicacies for her a Emirati husband and children and then for friends. Her party dishes are legendary, she often prepares feasts for fifty people and her imagination knows no bounds. She fuses traditional Emirati and Middle Eastern recipes with influences from far and wide. Her son now lives in Thailand and travelling there has brought Asian flavours to many of her dishes.
Her dream of sharing her recipes to a wider audience finally came true With A Pinch of Spice published by Motivate Publishing. The book contains over 80 recipes which are reflective of her life experiences.
